Power poha is a complete meal. It could be a perfect brunch recipe to keep one going for long hours. My husband is a passionate cricket player. Every weekend he plays for almost 6 hours a day. My goal is to keep him going for that time. Hence, I often rely on this quick fix. The reason I call it power poha, as I pack my recipe with protein.
Ingredients
2 cups Thick rice flakesĀ
1 cup boiled green peas.
1 small onion finely chopped
1 tomato finely chopped
1/2 bell pepper finely chopped
1/2 cup boiled peas
1/2 cup boiled corn
2 green chilies
1 inch grated ginger root
1/2 tsp turmeric
1 tbsp oil
1 tbsp of sugar
1 lemon ( juice )
Few sprigs of cilantro
1/2 cup of boiled black gram ( pulses)
Some sesame seeds
Method
Heat about 1 tbsp of oil. Add some mustard seeds. Once they begin to crackle, add onions, green chilies, grated ginger root and bell pepper. Saute them for few mins. Meanwhile, soak the thick rice flakes in water. Make sure it’s just enough water. Excess water could make them mushy. Then add the turmeric powder to the washed rice flakes and toss it in the pan. Mix the rice flakes thoroughly. This will help to get a nice even yellow color. Now, add the boiled peas, corn, Chana ( black gram ) and tomatoes. Lastly, add sugar, salt and lemon juice as per taste. Garnish it with cilantro and serve it hot.
